Even ruby-red colour with light garnet hues on the rim. The bouquet is elegant and fragrant with ethereal red berry and red floral perfumes with subtle layers of savoury thyme herbs, oak spice and cedar and lifted elements. Medium-bodied and slender in proportion, the red berry fruit flavours are bright and lively showing good sweetness. The fruit is complexed by dried herb notes and spicy, lifted oak. Fine-grained tannins underline the palate and soft acidity keeps the mouthfeel fresh and lively. This has a good core and line that leads to a good, lingering finish. This is an elegantly proportioned, aromatic and fresh Pinot Noir with spicy oak notes and fine-grained textures. Match with duck and pork, and with Asian cuisine over the next 4+ years.
Fruit from the ‘Two Sisters’ vineyard, destemmed, given a cold soak and indigenous yeast fermented to 14.5% alc., the wine spending 21-25 days on skins and aged 11 months in approx. 25% new French oak.
